Being a student, being away from home, being {semi} broke at times - all reasons why cooking at home isn't a regular activity para mi. Sometimes it's so much easier to buy prepared food, frozen food or my favorite, just eat out! The thing about cooking for one person is that you buy all the ingredients yourself, only eat one or two servings, and you have a bunch of food left over to finish within the next few days.
Going against the current for Stephanie's birthday last week (one of her many celebrations), we cooked at mi casa a full meal from scratch. Yes my friends, a mixed salad, chickpea + shrimp pasta and chocolate-chip oat cookies. The mixed greens, avocados , tomatoes, cucumbers, and jicama drizzled in honey-vinegarette resulted in a crisp, cool salad. The pasta was to die for, we used whole-wheat rotini pasta. The tight twists helped retain the tomato-based sauce in each bite. But of course for me, the best part of dinner was the oven-fresh cookie aroma coming from the kitchen. Nothing can beat biting into a cookie coming strait out of the oven, the chocolate practically melts in your mouth and the cookie dough mixed in is just divine. I like to make my cookies with a ratio of more chocolate chips to actual dough. The dough is just kind of the in between filling for the morsels :) I'm so tempted to make cookies this weekend!
