DIY Mushroom Risotto

Sometimes, a lil Trader Joe's does the body good. It's really convenient to stock up on their do-it-yourself frozen dinners for those nights where you want something easy and simple, all with good taste. DIY in the Trader Joe's sense means opening up the packet and heating up its contents in a pan. This is exactly what I did for the Trader Giotto's Mushroom Risotto.

I must let you know that the end product didn't match up to the picture on the package. That's ok though, when do the pictures ever look identical? I'm thinking next time I "make" mushroom risotto, I'll add a little bit of my own thing: tomatoes, spinach and cheeeeese. The mushrooms were generous though, I had some in every bite. It's supposed to serve 3 people... Ummm, I could have ate the whole thing myself. So let's say there are 2 servings to be appropriate. It could have used a little something on the side, maybe a hearty salad.

This meal really doesn't take long to make, but it could be mistaken for something from scratch ;)
